Feeding Delhi - Visiting a Sikh Temple Kitchen - Gourmet Getaways

This temple is one of the most prominent Sikh temples in Delhi, India. Earlier in the food tour I asked our guide Jaidev about the people we saw living in the street. I was concerned that they were so thin. Some adults and children looked like they were literally starving! Our guide explained that no one leaving near a temple should starve as they can be fed by the temple kitchen. Jaidev explained a lot of the temples practise a policy of Langar. This term means the temple has a kitchen staffed by volunteers that will provide a meal. There is no payment for food and all visitors to the temple can partake, regardless of religious beliefs.

Esa es la idea porque la que Jaidev montó hace ya cuatro años India Food Tour, una empresa que ofrece viajes gastronómicos y clases de cocina en Delhi, Jaipur, Udaipur, Jodhpur y Agra. “La comida india es popular fuera del país, pero sólo aquí se encuentra la auténtica”, cuenta el fundador de la empresa. Hoy esta pareja británica ha contratado un tour de cuatro horas en las que no se para de comer. Comer y caminar. O caminar y comer. El orden de los factores no altera al producto. “¿Habéis comido hoy?”. Es la primera pregunta que Jaidev les hace. “Nos dieron buena comida en el avión, pero la verdad es que ahora tenemos hambre”, contesta Darren. Y el tour no puede empezar con mejores intenciones. Primera parada en Shyam Sweet, para probar kachori y samosas. Se pueden parecer a nuestras empanadillas, pero en realidad no tienen nada que ver. Delhi day one

Exuberant Rajeev and the quieter JD were to lead us through the most extraordinary NINE hour food adventure through some of the oldest (and scariest) parts of Delhi, introducing us to some of the most authentic food tastes and experiences we could never imagine. It's now almost 24 hours after we concluded the tour and no gastric upsets yet - so it proved to be a completely successful food experience in every sense!! We set off in rickshaws through the crowded, gridlocked streets and laneways of heritage listed Old Delhi.

Savourer la vieille ville C'est à la sortie du métro Chawri Bazar que j'ai retrouvé Jaidev. S. Jamwal, cofondateur de l'India Food Tour. C'est là, dans ce quartier complètement fou qu'est le Vieux Delhi, que le jeune indien m'a donné rendez-vous et s'est appliqué à me faire découvrir les délices de sa ville et de son pays. Une balade gourmande de 4 heures à travers des lieux méticuleusement sélectionnés proposant les meilleures et les plus authentiques expériences culinaires indiennes. Une promenade incluant une dizaine d'arrêts gourmands en lien direct avec ce plaisir de bien manger si évident retrouvé en Inde. C'est en zigzaguant entre les passants, les animaux et les rickshaws, puis en enjambant les tonnes de déchets (majoritairement lancés en pleines rues par les travailleurs sanitaires en guise de protestation contre le gouvernement) que j'ai suivi Jaidev dans les dédales du Vieux Delhi et dans des lieux où je n'aurais jamais eu l'idée de m'aventurer. De petits kiosques, de minirestaurants familiaux et de véritables institutions de la vieille ville où l'Inde se révèle, une bouchée à la fois. Des fameux desserts du Shyam Sweets aux pains maison cuisinés dans un minuscule restaurant de l'étroite allée de Gali Paranthe Wali, en passant par le singulier marché aux épices de Chandani Chowk et l'arrêt au kiosque de crèmes glacées Kuremal Mohan Lal, les pains, yaourts, frites épicées, samossas, desserts, sandwichs indiens et autres plats typiques ont tous été photographiés, humés, examinés puis dévorés, à la cuillère ou même à la main comme le font les locaux
